I adapted this recipe and changed it up a bit from the original impossible cheeseburger pie first offered by bisquick. My family likes flavor and this change up with mexican spices gives it the jump in flavor I was looking for!
Ingredients: Note to cook. You can substitute ground turkey, and you can use non-organic products.
Preheat oven to 400 degrees F. Using you favorite non stick spray, prepare 2 – 6 serving jumbo muffin tins. I use non-stick calphalon readily available at Target. You can also use large baking pyrex or pans, and cut to serve. Choice is yours. NO RULES! Just watch for golden brown and center set. Recipe is for larger crowd, and leftovers. You may split in half for family of 5.
2lbs ground beef
1 large chopped onion and two stalks of celery ( optional)
2 1/2 cup of shredded cheese. Use your favorite. This was on sale as a mexican blend.
2 3/4 cup of milk
1 1/2 cup of Bisquick
6 large eggs
1 packet taco seasoning
1 Jar Salsa Verde
Quick saute of onions and celery to slight translucent
Add ground beef and cook on low, breaking up as you go.
While beef cooks, whisk eggs, bisquick, and milk. Do not over mix. Set aside
Add taco seasoning to beef and stir, while it continues to cook.
When beef is completely cooked, drain, and stir in Salsa Verde, and turn off heat.
Assemble pies into large muffin tins. This recipe will fill 12 JUMBO size spaces. I used 1/4 cup sized portions of batter first. With left over batter, disperse evenly to the cups.
Follow batter with ground beef mixture, using the same 1/4 cup, and dispersing left over meat evenly among the tins. NOTE: Just make sure you dont over fill, I USE JUMBO TINS.
Finally sprinkle cheese across each “pie.” Your choice on amount, and you can omit, if you don’t like cheese!
Cook for 25 minutes, and check. Should be a lovely dark golden brown. Remove for oven, and let cool for at least 10 minutes. After 10 minutes invert to board or counter for plating.
While pies are baking, prepare your salad, or hamburger fixings. Lettuce, tomato, cucumber, olives, and avocado with blue cheese dressing. The choice here is yours. I went with farm fresh greens pre-bagged, but you can do coleslaw, or rice, or even a bed of mashed potatoes! Whatever you choose, layer the platter or individual plates first, and finish off with the cheesburger pie. The idea is a hot meal that is fast and easy and on the weeknight table. Sharing nightly conversation is the best way I know to raise a family! These easy to hold pies are great leftovers for lunch the next day. Your co-workers are sure to be jealous.
